It sounds so fancy and classy in French but it’s actually just a simple potato and leek soup. A cheap and easy soup that’s so delicious, that I adore in the winter months.
About 5 rather large potatoes
1 large leek
1 garlic clove
3 tbsp. butter
8-dl/ 3.4 cups vegetable stock
3 dl/ 1.2 cups cream
Salt and ground pepper
- Peel and dice the potatoes, cut the leek lengthways, wash it under running water and cut it into 1 cm slices. Peel and chop the garlic.
- Place all ingredients in a large pan together with the butter, mix with a wooden spoon and let cook for a couple of minutes before adding the vegetable stock, a little at a time while stirring and bring to boil. Lower the heat and let boil for 30 minutes, stir occasionally.
- Add the cream, stir and let boil for another 10 minutes. If the soup is not smooth, mix it with a hand blender. Taste with salt and pepper.
