Vichyssoise

IMG_5200It sounds so fancy and classy in French but it’s actually just a simple potato and leek soup. A cheap and easy soup that’s so delicious, that I adore in the winter months.

4 portions

About 5 rather large potatoes

1 large leek

1 garlic clove

3 tbsp. butter

8-dl/ 3.4 cups vegetable stock

3 dl/ 1.2 cups cream

Salt and ground pepper

  1. Peel and dice the potatoes, cut the leek lengthways, wash it under running water and cut it into 1 cm slices. Peel and chop the garlic.
  2. Place all ingredients in a large pan together with the butter, mix with a wooden spoon and let cook for a couple of minutes before adding the vegetable stock, a little at a time while stirring and bring to boil. Lower the heat and let boil for 30 minutes, stir occasionally.
  3. Add the cream, stir and let boil for another 10 minutes. If the soup is not smooth, mix it with a hand blender. Taste with salt and pepper.
