Charlie’s Apple Pie

Apple cake probably one of the most autumnal desert you can find along with pumpkin pie.

Its one of the best dessert ever, you can have it after a nice family dinner, as well as with a cup of coffee or tea.

A slice of pie with vanilla custard or some vanilla ice cream and a cup of coffee are a combination that is hard to beat.

Plus it has apples in it ergo not really a desert (healthy food). Okay I know that’s a complete lie but lets keep me in the dark shall we.

Pie dough

3 dl / 1. 3 cups flour

1 dl/ 0.4 cups sugar

125 g / 4 oz butter

3 tbsp. ice cold water

0,5 dl / 0.2 cups sugar

Cut the butter in small cubes, put all ingredients in a bowl and “pinch” together until it becomes dough.

Place in the fridge for 30 minutes. Dress a baking tin with the dough.

Bake for 10 minutes at 225 ° C / 440 F

APPLES

7 small apples

Cinnamon,

Cardamom

Honey

1 dl / 0.4 cups sugar

Peel and dice the apples and mix with the rest of the ingredients. Place in the fridge for a few minutes

Crunch

1 dl/ 0. 4 cups brown sugar

1,5 dl/ 0.6 cups rolled oats

1 dl / 0.4 cups flour

100g / 3. 5 oz butter

Mix everything until it becomes a dough.

Add the apple mixture into the pre cooked pie dough

Add the crunch

Sprinkle some brown sugar over the crunch and pop it back into the oven.

Bake for 20 -25 minutes at 175img_5873

This week 

This week has probably been one of the worst in my life. I don’t know if I’ll go into the details later on but for now let me show you a few pictures from this week. 

Coffee has been my best friend this week and I couldn’t have gone without it. 

Leaves, leaves, leaves! So beautiful!!! Lunch spot during good weather

Stored away my summer clothes and got two new books (and I got them in one photo – win win) I love the fact that it is hat season 🙂

Apple cinnamon buns

This is a recipe I made a few weeks back and still hasn’t gotten around to posting it, not really having a reason to why I haven’t except procrastination.

Apple cinnamon buns, a deathly combination, seriously I can eat cinnamon buns everyday without ever getting sick of them, I love making them and they are just plain great.

50 grams of yeast

5 dl / 2 cups of milk

1 dl/ 0.4 cups of sugar

100 grams/ 3.5 ounces of butter (room-temperature)

1/2 of teaspoon salt

2 teaspoons of cardamom 

About 4-5 cups of flour/10-12 dl

Filling:

250 grams/ 8.8 ounces of butter

cinnamon

about 2 teaspoons of vanilla sugar

/ about 3 tablespoons of sugar

3-5 apples diced

Garnish:

1 whisked egg

Brown sugar

 

  1. Crumble the yeast in a big bowl, heat the milk so it’s body temperature, pour the milk over the yeast and stir until the yeast and milk is one.
  2. Add butter, sugar, salt and cardamom. Add some of the flour (about 1.5 cups), make sure the flour is airy and not compact. Start to work the flour into the dough, you can use a hand mixer with the mixers that are used for dough’s. Add more flour, a little at a time. It’s enough when the dough starts to loosen from the edges of the bowl.
  3. Cover with a kitchen towel. Let stand for 1 hour.
  4. Heat the oven to 250 celcious / 480 degrees Fahrenheit. Tuck the dough out (split it in 2) and put the filling on. You can mix the butter with the vanilla sugar. Cover the thin dough with butter.

In a seperate bowl, mix cinnamon, apples and sugar, and then divide it evenly over the dough. Roll from one side to another and cut, or braid.

  1. Cover the buns and let stand for 30 min, covered. Whisk the egg, brush the buns and sprinkle brown sugar on top.
  2. Bake until they get a little color. About 7 min.
  3. ENJOY!

weekend getaway

Happy Monday,

Maybe not so happy – I know for a fact that it’s going to be a day that’s worse than Dante’s inferno.

But having a bad Monday means I can remise this past weekend that was quite perfect.

My beau and I traveled to the countryside to a friends of mine miniature cabin, which consist of a kitchen, living room and a sleeping corner.

We all, party of six, cramped up into this small cabin in front of the fireplace, ate, cooked, baked, was out walking in the nature, Playing in the heaps of leaves and as night hit us we all curled into our sleeping bags in front of the open fire, and had a good nights slumber, together.

It was the perfect weekend; away from civilization, good roads, take away food and good cellphone reception.

how to survive the flu

This past week I have had the flu, and I’ll let you in on a secret – it sucks!

saturday has arrived upon us  and well i’m feeling a much better and well having survived this epidemic i thought i would pass on some tips on how to make it a bit more bearable.

  1. stay at home. I know that you probably have a full week at work or at school, and you have that party you just cant miss, and topshop has that members only sale you just must attend.

here is the brutal truth; if you have a temperature of 102 or more you stay at home, you will get others sick and you will not be able to conclude much anyway because you are too damn sick. so if its not a question of life and death just stay at home in that cosy bed of yours.

2. drink something warm! preferably with honey. hot tea, warm apple cider, the magic cold brew (this is amazing for your throat), hot chocolate. however i would advise caffeinated beverages because you need to rest – the only way to get better.

3. NETFLIX – how people survived the flu before the TV, i will never understand – because the only good thing about being sick are infinite tv marathons of your favorite tv show, and i will recommend you mine.

– SUITS is smart, sassy, clever, sophisticated, timely and immensely entertaining. this legal drama introduces you into the lives of the people that work at Pearson Hardman, one of the top firms in the city (NYC). oh and one of the senior partners hires a fake lawyer as an associate.

this will grab you and pull you in and almost convince you to go to law school, plus the writing of the show is extremely witty and cleaver.

– stranger things is a science fiction drama, that will enchant you, make you squirm, yell out in fear, and live out the anger of its characters.

  4. sleep and rest, if you are sick. its the only way to get rid of the virus and get better, it might be boring but its only for a short period of time

Bad day 

Today is literally the crappiest day. 

Everything is going wrong from oversleeping, not having time for breakfast, breaking my favorite jeans, forgetting lunch at home, not having actual time to go out to eat. 

And it’s only 12 pm… and I still haven’t gotten any coffee in my system, God I need caffeine. 


At least it’s cold enough to wear camel colored ponchos.
