Apple pie Cake

Ingredients

 1,5 sticks /180 grams butter

2 cups / 4.7 dl Flour

1 cup / 2.3 dl brown sugar

2 tsp. cinnamon

0,5 tsp. nutmeg

1 tbsp. honey

2tbsp brown sugar

8 apples

2 tbsp. lemon juice

 

directions

 

  1. In a large bowl, combine flour, brown sugar and 1 tbsp. of cinnamon. Add butter until it becomes a dough. Put in the fridge for about an hour to rest.
  2. Press 2/3 of the mixture out to the bottom and 1 inch (2, 5 cm) up the side of a spring forms.
  3. Preheat the oven to 350 F / 175° C.
  4. Peel the apples, cut them into thin slices and place in a bowl. Toss them with nutmeg, cinnamon, honey and brown sugar.
  5. Put in the prepared pan, pressing down gently as you place them.img_6874
  6. Sprinkle the remaining dough on top.
  7. Place the pan on an aluminum lined baking sheet, and bake for 1h and 15 minutes or until golden brown.
  8. Let it cool in the pan to set. Serve room temperature.

Veggie Chili

IMG_5009Veggie chili, it’s a delightful hearty meal to enjoy. Sit down as a family. Talk and just enjoy this warm ”stew” during a cold rainy fall day. And thats whats upon us, summer is almost over and autumn is approaching with big leaps.

My family usually eat this chili with rice but you can just aswell eat it as a soup or with tortilla chips. (this recipe can be made gluten free if one removes the rice)

Ingredients

2 medium-sized sweet potatoes, approximately 500g

1 level teaspoon cayenne pepper, plus extra for sprinkling

1 heaped teaspoon ground cumin, plus extra for sprinkling

1 level teaspoon ground cinnamon, plus extra for sprinkling

Sea salt

Freshly ground black pepper

Olive oil

1 onion

1 red pepper

1 yellow pepper

2 cloves garlic

a bunch of fresh coriander

1 fresh red chili

1 fresh green chili

2 x 400 g tinned beans, such as kidney, chickpea, pinto and cannellini

2 x 400 g tinned chopped tomatoes

  1. Preheat the oven to 200˚C/400˚F/gas 6.
  2. Peel the sweet potatoes and cut into bite-sized chunks. Sprinkle with a pinch each of cayenne, cumin, cinnamon, salt and pepper. Drizzle with olive oil and toss to coat, then spread out on a baking tray and set aside.
  3. Peel and roughly chop the onion. Halve, deseed and roughly chop the peppers. Peel and finely chop the garlic.
  4. Pick the coriander leaves and put aside, then finely chop the stalks. Deseed and finely chop the chilies.
  5. Place the sweet potatoes in the hot oven for 40 minutes, or until soft and golden.IMG_4990
  6. Meanwhile, put a large pan over a medium-high heat and add a couple lugs of olive oil. Add the onion, peppers and garlic and cook for 5 minutes.
  7. Add the coriander stalks, chili and spices and cook for another 5 to 10 minutes, or until softened, stirring every couple of minutes.
  8. Drain the beans, and then tip them into the pan with the tinned tomatoes. Stir well and bring to the boil, then reduce to a medium-low heat and leave to tick away for 25 to 30 minutes, or until thickened and reduced. Keep an eye on it, and add a splash of water if it gets a bit thick.IMG_4991
  9. Stir the roasted sweet potato through your chili with most of the coriander leaves. Taste and season with salt and pepper, if you think it needs it.

apple muffin

These muffins are really good and super easy to make, they takes about 30 minutes to create.

Ingredients

255 g plain flour

3 teaspoons baking powder

½ teaspoon salt

100 g caster sugar

60 g butter

225 ml milk

One large apple peeled, cored and chopped

Cinnamon

Method

  • Preheat oven to 200 C, lightly grease a 12 cup muffin tray
  • in a large bowl, sift together flour, salt baking powder.
  • In a separate bowl, cream together sugar and butter. Stir the flour mixture into the sugar mixture alternatively with the milk. Fold in the fruit and cinnamon. Pour batter into prepared muffin tin.
  • bake in preheat oven for 18 to 25 minutes, until a toothpick inserted into the center of a muffin comes out clean.

Homemade healthy ice tea

I’m sorry for not updating much lately but I’m busy prepping for exams.
Recently a heat wave has hit town and studying in 40+ degrees is kind of painful, to make it a bit more durable I’m literally doing 3 pints of lemon ice tea a day:)

Recipe
Half a lemon
1 bag of Yorkshire tea
2 pints of water
Agave syrup

1. Boil water
2. Add the tea bag into the water
3. Leave the tea bag in the water for about 5 minutes
4.let the tea cool down for about an hour or until cool
5.add the juice of half a lemon and a bit of agave syrup for sweetener
6. Add ice and pour into a big glass and enjoy!

syltkakor / swedish jam biscuits

Igen, ett recept på kakor. Syltkakor är typiska svenska kakor och är superlätta att göra! Egentligen kan man använda vilken sylt man vill, men traditionellt sett är det hallonsylt som fyller kakorna. Det är också därför dessa kakor ibland kallas för hallongrottor. “Hålet” i kakan kan variera i storlek, men tänk på att inte lägga i för mycket sylt, när kakorna gräddas svämmar sylten över och rinner ner över kakorna. / Yet another recipe for cookies. Jam cookies are very stereotypical for the Swedish kitchen, and super easy to make! You can use any jam you like, but the traditional jam cookie is filled with raspberry jam. That’s also why they sometimes are named raspberry caves. The “cave” in the cookie may vary in size, but remember not to put in too much jam. When the cookie is baked, the jam will drizzle down the sides of the cookies.

Recept / Recipe

5-5 1/2 dl mjöl / 2-2.2 cups of flour

1 dl socker / 0.4 cups of sugar

200 g smör / 7 ounces of sugar

2 msk vaniljsocker / 1 tbsp of vanilla extract

Hallonsylt / Raspberry jam

1. Sätt ugnen på 200 grader. Heat the oven to 390 F.

2. Mixa mjöl, socker, smör och vaniljsocker i en mixer. / Put flour, sugar, butter and vanilla extract in a food processor and make the dough.

3. Rulla små bollar och tryck ut ett hål med tummen i mitten. / Roll small dough balls and create a cave with your thumb in the middle.

4. Lägg i lite sylt i hålen. / Put some jam in the caves.

5. Grädda i ca 10-12 min eller tills kakorna fått lite färg. / Bake for about 10-12 min or until the cookies has gotten some color.
